Vanilla powder: It is made from our own 100% Tahitian vanilla beans, and it doesn't contain any sugar or additives of any kind. This is NOT sugar powder. We take whole pristine beans and grind them to a fine powder.

Vanilla Paste: It is made from our Tahitian vanilla beans (nothing else is added) pulverized in a 500 micron size grading (size of the seed of vanilla).
The grinding process we use dies not warm the pods by friction during the pulverizing, preserving entirely the taste and the subtlety of the aromas of the freshly prepared pods.
Also, unlike many cheaper products on the market, our vanilla powder/paste are NOT made from exhausted vanilla beans. That's it. Nothing else is added.
Both are easy to use. You need just a little amount to add excellent vanilla flavor.
For example, you can add a teaspoon to coffee before brewing to make a whole pot of vanilla flavored coffee. It is also great in tea, Crème Brulée, and ice cream.
Instructions for use
Can be used as a substitute for vanilla beans, also used in cooking for preparing savory dishes (foie gras, fish, duck) as well as in pastries.
Suggestion
when preparing jam, use the following ratio : one teaspoon of vanilla powder per one kilo of fruit.
1/2 teaspoon of vanilla powder is approximately the equivalent of 1 teaspoon extract.

You will notice a change in the appearance of our ground vanilla beans. This is simply because we have lowered the moisture content to preserve shelf life and avoid any bacteria growth.
The production process is the same as before. We take our 100% Tahitian vanilla beans, dry them (so they will not clog the grinding machines), double grind them, and then add back some water to restore them to their more natural moisture content. It is this last step that we have discontinued.
If you prefer the previous texture you can restore the moisture by emptying the entire contents of the ground beans into a small bowl and then very slowly adding small amounts of water while mixing with a fork. Be careful not to add too much as a few drops of water goes a long way. You can then repack the ground beans in the jar and use as before.
